Another Field Trip

This time we went to the acquarium. We had so much fun. As soon as you enter there is this huge man made waterfall. Libby was scared out of her mind, as the rushing water was loud. The only way to enter the acquarium is to walk by this waterfall. So I had to carry her in screaming. She was screaming... not me. Once we made it by she was even more panicked by the sight of all the fish. Poor little thing. She finally calmed down and fell in love with the watercritters that were all around her and she was even more enthralled with the "touch pool." We went with some of our dearest friends. The picture above shows them all after the acquarium experience. The one below is of a contented little Libby.

Cottage Cheese Pancakes

Ingredients:

DRY:

• 1 1/4 cup whole wheat flour
• 1 tsp. baking powder
• 2 Tbsp. Sucanat or brown sugar
• 1/2 tsp. cinnamon
• 1/4 tsp. salt

WET:

• 4 eggs
• 1 cup cottage cheese
• 1 cup vanilla or plain yogurt or half plain and half vanilla
• Cooking spray

1. Combine dry ingredients and make a well in the center.
2. Combine eggs, cottage cheese, yogurt in bowl. Pour into dry ingredients. Stir until moistened
3. Heat your nonstick skillet or pan. Spray with cooking spray. Medium to medium high heat is best.
4. Measure 1/4 cup for each pancake. This makes 10-12 pancakes.

Why I will be Jake's Valentine---3rd in Line

After church last night, while I was changing Si's diaper. I was interrupted by Ben's blood curdling scream. In between chest heaving sobs, I manage to decipher that Louisa had assaulted him by striking his face with her hand. Why, you might ask? I did too. Louisa was in my room awaiting the disciplinary rod when I got to her. She told me why she struck Ben. It was because Ben told her that he was going to be daddy's valentine, and that she wasn't. In between her sobs, she tells me that she is daddy's valentine. With an understanding heart, it has been 6 long months, I told her that was fine, she can have daddy as her valentine, just don't strike anyone else who wants to be that person too. So, I will take my place as third, after Louisa and Ben. I can wait...

This is a Warning

I am so excited for my husband to come home. I have been talking way too fast, I jump from one subject to the next with no warning, just ask my friends. I can only imagine that this is going to get worse before it gets better after next Thursday. So, please bear with me if I make no sense when you talk to me. I am overloaded with nervous energy.
